Makes 8 servings



Add about 1 cup of splenda for sweetener and 1/2 cup water to bond with the flax to make the cookies form. I use a muffin tin and each cookie has about 1/4 cup of the mixture. The oats I use are "6 grain hot cereal", where 2 cups is equivalent to the 1 4/5 cup of regular oat calories. DELICIOUS AND NUTRITIOUS

Recipe Ingredients for Chocolate Pumpkin Flax Cookies

3/4 cup canned pumpkin
2 tbs cocoa
3 tbs ground flaxseed
1 4/5 cups oats
1 tsp ground cinnamon
1 tsp pumpkin pie spice

Recipe Directions for Chocolate Pumpkin Flax Cookies

  1. Mix oats, cocoa, pie spice, cinnamon, and splenda

  2. Mix Pumpkin, water, a little bit of vanilla extract, apple cidar vinegar, and salt if you want more flavor (I use without)

  3. Mix wet into dry ingredients

  4. Divide mixture into 8 different muffin tin compartments (I do 8 to make each cookie equal 100 calories)
