Recipe Ingredients for Chocolate Pudding

1/4 c sugar
2 T Splenda
1/2 c unsweetened cocoa powder
2 1/2 T cornstarch
2/3 c milk, dry, nonfat, instant
2 c water
2 egg whites
2 oz semi-sweet chocolate chips
1 t vanilla extract

Recipe Directions for Chocolate Pudding

  1. Beat the egg and vanilla lightly in a heat-proof bowl, large enough for the milk later. Set aside.

  2. Whisk together the sugar, cocoa, cornstarch, dry milk and salt in a heavy 2-quart saucepan. Gradually whisk in the water. Bring to a boil, whisking constantly, and boil, whisking, until pudding is thick, about 3 to 5 minutes. Remove from heat.

  3. Very gradually add the hot chocolate mixture to the egg, whisking constantly. Whisk in the chocolate chips until they are melted and the mixture is smooth.

  4. Refrigerate, covered, until cold, at least 2 hours or eat warm. Good with whipped cream.
