Recipe Ingredients for Chocolate Pudding Pie

2 pkg pudding
3 1/2 c lowfat milk
1 1/3 c flour
5 T unsalted butter
3 T shortening
1 T sugar
4 T ice water

Recipe Directions for Chocolate Pudding Pie

  1. In the food processor, combine the flour, sugar and salt. Pulse2 or 3 times to mix. Add cold butter and shortening pieces and pulse 8 to 10 times until mixture forms large coarse crumbs the size of large peas. Add the ice water a little at a time and pulse 10 to 12 times just until the dough begins to come together in a mass but does not form a ball. Transfer the dough to a work surface and shape the dough into a 6-inch disk. Wrap tightly in plastic wrap and refrigerate until well chilled, about 1 hour or for up to overnight. Roll out dough, line pan with crust and freeze until firm, at least 30 minutes.

  2. Line the frozen pie crust with heavy duty foil, fill with beans or rice and bake until it dries out, about 15 minutes. Pull up on the corner of the foil. If it sticks, return to oven and check every 2 minutes. Carefully remove the weights and foil. Reduce the oven to 350 degrees and bake 10 minutes longer or until crust is golden brown. Transfer to a wire rack.

  3. Cook pudding on stove top using package instructions. Pour into baked pie crust and chill in the refrigerator at least 2 hours.
