Vegan, whole wheat chocolate pistachio cupcakes. Use vegan chocolate products, and organic ingredients.

Recipe Ingredients for Chocolate pistachio cupcakes

1 cup apple juice
1 cup unsweetened apple sauce
1 cup cold water
2 tsp white vinegar
2 tsp baking soda
2 tsp vanilla extract
2 cups whole wheat flour
2 cups sugar
1/4 tsp salt
1/4 cup cocoa powder
3 ounces dark chocolate, chopped
1 cup pistachios, crushed

Recipe Directions for Chocolate pistachio cupcakes

  1. Combine juice, apple sauce, water, vinegar, soda and vanilla.

  2. Sift in flour, sugar, salt and cocoa powder and mix well.

  3. Fold in pistachios and chocolate. Pour appx. 1/4 cup batter into each lines cupcake tin (makes 24).

  4. Bake at 350* for 15-20 minutes.

  5. ***IF substituting white flour, increase to 2 1/2 cups!
