These creamy chocolate layered cupcakes will satisfy anyone's chocolate and peanut butter cravings in one large cupcake with less than 300 calories! The recipe is easy to make and sure to be a favorite.

Recipe Ingredients for Chocolate-Peanut Butter Layered Cupcakes

1 1/2 cups flour
1/3 cup baking cocoa
1 cup brown sugar, packed
1/3 cup vegetable oil
1 tablespoon white vinegar
1 egg
8 oz cream cheese
3/4 cup crunchy peanut butter
1/3 cup sugar
1/3 cup powdered sugar
1/4 cup peanut butter chips
1/4 cup semi sweet chocolate chips

Recipe Directions for Chocolate-Peanut Butter Layered Cupcakes

  1. Heat oven to 350 degrees Fahrenheit. Place paper baking cup in each of 18 muffin cups.

  2. In large bowl, mix flour, cocoa, brown sugar, baking soda and salt. Add oil, water, vinegar and vanilla to flour mixture, stirring just until smooth.

  3. In another large bowl, beat egg, cream cheese, peanut butter and granulated sugar with electric mixer on medium speed until smooth. Add powdered sugar and beat until creamy.

  4. Spoon 1 tablespoon chocolate batter into each cup; evenly spread 1 tablespoon peanut butter filling on top. Repeat for two layers of each, with the second peanut butter layer on top.

  5. Sprinkle with peanut butter and chocolate chips.

  6. Bake 20 to 30 minutes or until toothpick inserted in the center come out clean. Allow to cool in pan for 15 minutes. Remove from pan to cooling rack; cool 15 minutes.
