Makes 12 large cupcakes or 16 (or more) mini cupcakes. You can also make these w/plain creamy peanut butter & doll-up your favorite jam in the middle.

Recipe Ingredients for Chocolate Peanut Butter Cup Cakes

1 cup flour
2 tsp. baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
2 large egg whites
1/4 cup honey
1/4 cup extra virgin olive oil
3/4 cup coconut milk
4 tbs peanut butter
4 tbs cocoa powder
1 tsp cinnamon

Recipe Directions for Chocolate Peanut Butter Cup Cakes

Set oven to 350 degrees. Mix all dry ingredients in a medium bowl, then mix all wet ingredients in a small bowl, add and mix until well blended. Scoop mixture/batter into baking cups (large, medium or mini) with a tablespoon. Bake for 30 minutes, or 20 for mini's.
