Adapted from a Betty Crocker recipe. I like this recipe because it doesn't make a million cookies to sit around and tempt you - this whole batch gets gobbled up fast. Good for getting a little nutrition in when you absolutely must satisfy that chocolate craving. This version is still pretty good.

Recipe Ingredients for Chocolate Oatmeal Cookies, reduced fat/calorie

1 1/3 cup quick-cooking oats
3/4 cup whole wheat flour, sifted
1 tbsp Egg Beaters
1/3 cup honey
1/2 cup Smart Balance 37% spread, softened
21 1/2 g (1/4 cup) Cocoa, Dry Powder, Unsweetened
1/2 tsp baking soda
1/8 tsp salt

Recipe Directions for Chocolate Oatmeal Cookies, reduced fat/calorie

  1. Preheat oven to 350 degrees.

  2. Mix butter, honey, and egg white thoroughly.

  3. Add oats, cocoa, and flour and mix thoroughly.

  4. Add baking soda and salt and immediately drop by generous teaspoonfuls onto an ungreased cookie sheet.

  5. Bake at 350 degrees for 10-12 minutes or just until the tops no longer look wet under the oven light.

  6. Allow cookies to cool on the cookie sheet until set, then carefully remove to a wire rack to finish cooling. (You will need a spatula, they are soft.)
