Recipe Ingredients for Chocolate Mud Cake

8 oz unsalted butter
8 oz dark chocolate, chopped
2 tablespoons instant coffee powder
5 oz self raising flour
5 oz plain flour
1/2 teaspoon bicarbonate of soda
1/2 cup cocoa powder
2 1/4 cup caster sugar
4 eggs
2 tablespoons oil
1/2 cup buttermilk
5 oz unsalted butter
5 oz dark chocolate

Recipe Directions for Chocolate Mud Cake

  1. Preheat the oven to 315 degrees F. Lightly grease a deep 9in round cake tin and line with backing paper, making sure the paper around the side extends at least 2 in above the top edge.

  2. Put the butter, chocolate and coffee in a saucepan with 1/4 up hot water and stir over low heat until smooth. Remove from the heat.

  3. Sift the flours, bicarbonate of soda and cocoa powder into a large mixing bowl. Stir in the sugar and make a well in the centre. Place the eggs, oil and buttermilk in a separate mixing bowl and mix until combined. Pour into the dry ingredients and mix together with a whisk. Gradually add the chocolate mixture whisking well after each addition.

  4. Pour the mixture (ti will be quite wet) into the tin and bake for 1 1/4 hours. Test the centre wit a skewer-the skewer may be slightly wetter than normal. Remove the cake from the oven. If the top looks raw, bake for another 5 -10 minutes, tehn remove form oven. Leave in the tin until completely cold, then turn out and wrap in plastic wrap.

  5. For the icing, combine the butter (5oz) and dark chocolate (5oz) in a saucepan and stir over low heat until the butter and chocolate are melted. Remove and cool slightly. Pour over the cake and allow it to run down the side.
