Family favorite at holidays. Meant to be served in graham cracker pie crusts with light whipped cream on top but good alone too! This most likely should fill 3 regular sized pies, leaving room for the whipped cream on top. For 3 pies, 2 whipped cream containers will probably be needed. So if you use the pie crust and whipped cream you'll just need to factor that in to. Divide pie crust nutrition values by 6 as I calculated servings for 18 (6 slices x 3 pies).

Recipe Ingredients for Chocolate Mousse

1/2 cup sugar
1 cup water
6 egg yolks
12 ounces semisweet chocolate chips
3 cups heavy whipping cream

Recipe Directions for Chocolate Mousse

  1. Whip cream until thick and fluffy, preferably in stand mixer but could be done with electric beaters. You will get tired using a whisk before the cream whips. Pay attention if it's in a stand mixer as it can start turning to butter fast!

  2. Combine sugar and water in saucepan. Boil for a couple minutes.

  3. In blender combine sugar, water, and chocolate. Blend 30 seconds. Add yolks. Blend 30 seconds.

  4. Fold chocolate mixture into cream. Mix until combined.

  5. Pour into shells or containers to put in the fridge but don't put whipped cream on yet! Mixture will be runny, but it sets in the fridge in an hour or two.
