Recipe Ingredients for Chocolate Mousse

2 egg yolks
2 tablespoons caster sugar
50 g dry vermouth
110 g dark chocolate
280 ml whipping cream

Recipe Directions for Chocolate Mousse

Place yolks, sugar and half the vermouth in a bowl set over a pan of hot water. Whisk until very thick and mousse like. Leave to cool. Carefully melt the chocolate with the remaining vermouth an cool. Whip the cream until floppy. Fold the yolk mixture into the chocolate then fold in the cream. Spoon into 6 ramekin dishes or one large glass bowl. Chill overnight if possible. Decorate with grated chocolate.
