Can be made two ways. Why two ways? Flat meringues for ice cream sandwiches, or just for munching.

Recipe Ingredients for Chocolate Mint Meringue Cookies

3 egg whites
1/4 tsp cream of tartar
1/2 tsp peppermint extract
1/3 cup sugar, fine
85 grams chocolate , (dark) finely chopped

Recipe Directions for Chocolate Mint Meringue Cookies

  1. Add cream of tartar to egg whites and beat until foamy.

  2. Add fined sugar (put in food processor until fine, or buy).

  3. Beat until peaks form.

  4. Add peppermint oil.

  5. Fold in chocolate.

  6. Add to piping bag, and put on parchment paper.

  7. Bake at 250 for 40 minutes.

  8. Let cool before removing from parchment paper. Transfer to airtight container.

  9. Makes 20 meringues.

  10. Alternate form:

  11. Add peppermint oil to egg mixture at beginning, and mix for 12 minutes. The mixture will never form the proper peaks, and will be runny.

  12. Bake at 250 for 40 minutes, 300 for 5 minutes.

  13. The resulting cookie will be chewier, slightly golden brown around the edges, and flat. Let cool before removing from parchment paper. Store in airtight container.

  14. Makes 20 meringue cookies.
