These babies definitely satisfy your cookie/chocolate cravings and you are even allowed to reach for another, or even another 5! 1 Tsp of mixture is a little less than 5 cal 1 Tbsp would be roughly 10 cal ** This recipe was made to the Tbap/10 cal version

Recipe Ingredients for Chocolate Merengue

6 egg whites, room temperature
1/4 tsp salt
1/4 tsp cream of tartar
1 1/2 tsp vanilla extract
1/4 cup unsweetened cocoa
1/2 cup Splenda (instead of 1/2 cup sugar)
1 tsp unsweetened cocoa
1/8 teaspoon cinnamon

Recipe Directions for Chocolate Merengue

  1. Preheat oven to 250 degrees F.

  2. Line non-stick baking sheets with parchment paper. In a small bowl, combine the 1/4 cup cocoa and sugar together; set aside.

  3. In a large bowl (ceramic or glass) using your electric mixer (medium-high), beat egg whites until foamy. While beating, add salt, cream of tartar, and vanilla extract.

  4. Add the cocoa/sugar mixture, 1 tablespoons at a time, until the egg whites are stiff and glossy (start to hold peaks).

  5. Drop batter by Tspn/Tbsns onto non-stick baking sheets. In a small bowl, combine the remaining 1 teaspoon cocoa and cinnamon. Using a sieve or a sifter, sprinkle mixture over the non-baked cookies.

  6. Bake 20 to 30 minutes; turn off the oven, open the door slightly (prop open with rolled towel or wooden spoon), and allow cookies to cool in the oven. Remove from oven and store in a tightly covered (airtight) container.

  7. 1 tspn of mixture is a little less than 5 cal

  8. 1 tbsn would be roughly 10 cal
