Recipe Ingredients for Chocolate Macaroons

3 large egg whites
100 g blanched almonds, finely ground
30 g brown sugar
175 g powdered sugar
35 g cocoa powder
40 g granulated sugar

Recipe Directions for Chocolate Macaroons

  1. Sift together the almond flour, brown sugar, powdered sugar and cocoa powder. Place into a bowl.

  2. Whip the egg whites on high speed with a pinch of cream of tartar until medium-stiff, then add the granulated sugar and whip for 5 - 10 seconds more, until a little stiffer.

  3. Fold the egg whites into the sugar mixture until smooth and shiny.

  4. Put into a piping bag with a 1/2" diameter tip and pipe onto a silpat in 1" diameter rounds. Should make 40.

  5. Bake at 375F until slightly set but still a little jiggly when you touch them.

  6. Allow to sit for a few minutes and sandwich them together while still warm.
