Flourless chocolate cakes with gooey centers. I substituted almonds for the pistachios and the outcome was amazing

Recipe Ingredients for Chocolate Lava Cakes with Pistachio Cream

1 cup shelled dry-roasted pistachios
1 3/4 cups sugar
1/4 cups unsweetened cocoa powder
2 large eggs, whole
5 large eqq whites
2 ounces bittersweet chocolate
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
1 cup 1% reduced fat milk
1 dash salt

Recipe Directions for Chocolate Lava Cakes with Pistachio Cream

  1. Place nuts in a food processor and process until crumbly and flour-like.

  2. Place half the ground nuts, 1 1/4 cup of the sugar, cocoa powder, eggs, and egg whites in the top of a double boiler over simmering water and stir with a whisk. Add the chocolate (chopped it up first) and cook, whisking until the sugar and chocolate are all melted and the mixture is smooth - about 3 minutes.

  3. Remove from heat and add the baking powder and vanilla extract and whisk until smooth and well incorporated.

  4. Spoon batter evenly into 12 muffin cups, sprayed well with cooking spray. Put the pan, covered, into the fridge to chill for 2 hours.

  5. Place remaining ground nuts into a blender or food processor with 1/2 cup sugar, salt, and milk, and blend well. Strain to remove nut solids, then pour into a small saucepan and bring to a boil.

  6. Reduce heat and simmer until thickened, about 5 minutes. Stir occassionally. Remove from heat, cover with plastic wrap directly on the sauce to prevent a skin, and set chill.

  7. Preheat oven to 450 degrees F.

  8. Bake the cakes at 45o degrees for 8 or 9 minutes, or until ALMOST set (centers should not be firm). Let cool in pan for 5 minutes.

  9. Remove cakes from pan and serve each with a drizzle of 2 teaspoons of the cream sauce.
