Recipe Ingredients for Chocolate Ginger cookies

1/2 cup sugar
2 cups flour
2 oz bittersweet chocolate
1 tsp vanilla
1 cup chopped crystallized ginger
1 cup butter
1/2 tsp salt

Recipe Directions for Chocolate Ginger cookies

  1. Melt chopped chocolate in double boiler and cool. Beat butter and eggs until light and fluffy. Mix in vanilla and melted chocolate. Combine well. Mix in flour and salt and mix well.

  2. Divide into 4 equal portions. Refrigerate until firm, at least 2 hours.

  3. Rollout out each section, cut with cookie cutters and bake at 375 for 12-14 minutes. Cool on wire racks.
