Recipe Ingredients for Chocolate-Espresso Faux Souffles

8 oz dark chocolate
4 eggs, separated
1 salt
2 T coffee, strong esspresso

Recipe Directions for Chocolate-Espresso Faux Souffles

  1. Melt the chocolate in the top of a double boiler, set over a pan of simmering water on medium heat.

  2. Beat the egg whites with a pinch of salt until stiff, glossy, white peaks form.

  3. Whisk the egg yolks into the chocolate. Stir in the coffee. Gently fold in 1/3 of the whites, and then fold in the rest.

  4. Pour the souffle mixture into 4 molds, cover with plastic wrap, and refrigerate for four hours before serving.
