For a dessert, it really isn't bad on calories or carbs. I changed the sugar to Splenda and calories went up, carbs stayed the same.

Recipe Ingredients for Chocolate-Espresso Chiffon Cake

8 eggs
4 tsp instant coffee
3/4 cup water
2 cups flour
1 1/2 cups sugar
1 tbsp baking powder
1 tsp salt
1/2 cup cooking oil
1 tsp vanilla
3 oz bittersweet chocolate, grated
1/2 tsp cream of tartar

Recipe Directions for Chocolate-Espresso Chiffon Cake

  1. Separate eggs, discarding 3 of the yolks. Let eggs stand at room temp for 30 minutes.

  2. Preheat oven to 325(F).

  3. Dissolve coffee in water; set aside.

  4. In large bowl, stir together flour, sugar, b. powder, and salt; make well in the center.

  5. Add the oil, 5 egg yolks, coffee, and vanilla. Beat on low till moistened.

  6. Beat on Med High 4-5 minutes or until satin smooth.

  7. Stir in grated chocolate.

  8. Wash and dry beaters.

  9. In 4-qt bowl, beat egg whites and c. of tartar until stiff peaks form.

  10. Pour chocolate batter in thin stream over surface of whites; fold to blend.

  11. Spoon into tube pan; bake 60-70 minutes or until top springs back.

  12. Invert to cool.
