Recipe Ingredients for Chocolate Cinnamon Cakes with Figs and Goat Cheese Chocolate Ganache

3 eggs, divided
3 oz cream cheese
2 tsp vanilla extract, divided
1 1/2 oz unsweetened chocolate
2 oz 1% buttermilk, divided
2 tbsp cocoa powder
1/2 tsp cinnamon
1/2 cup Ideal sweetener
3 tbsp honey, divided
1 oz mission figs, chopped
1 oz prunes, chopped
2 oz semisweet chocolate
14 grams soft goat cheese

Recipe Directions for Chocolate Cinnamon Cakes with Figs and Goat Cheese Chocolate Ganache

  1. Beat egg whites for 5 minutes, until fluffy.

  2. Beat together egg yolks, unsweetened chocolate, cream cheese, and vanilla.

  3. Once that is thoroughly mixed, beat in cinnamon, sweetener, honey, and cocoa powder.

  4. Add buttermilk a bit at a time (1 oz) to thin out.

  5. When chocolate mixture is thoroughly combined, fold gently into egg whites.

  6. Stir in chopped dried fruit.

  7. Ladle batter into 6 greased muffin cups.

  8. Bake for 20 minutes at 350 degrees F.

  9. For the ganache, melt semisweet chocolate over low heat.

  10. Stir in remaining vanilla and buttermilk, and add goat cheese.

  11. Stir constantly until chocolate is completely melted and goat cheese is thoroughly combined.

  12. After cakes are baked, cool for 2 minutes in pan, then turn out onto wax paper. Turn up-side-down.

  13. Pour ganache over each cake and allow to cool.

  14. Makes 6 individual chocolate cakes.
