This recipe is from Colleen Patrick-Goudreau's "Joy of Vegan Baking". For a different flavor, substitute dried blueberries or cranberries for the chocolate chips!

Recipe Ingredients for Chocolate Chip Scones

1 1/2 tsp Ener-G Egg Replacer
2 tbsp water
2 1/2 cups unbleached all-purpose flour
1/3 cup granulated sugar
4 tsp baking powder
1/2 tsp salt
3/4 cup Earth Balance butter, cold
1 cup chocolate chips (no milk)
1/2 cup Silk soymilk

Recipe Directions for Chocolate Chip Scones

  1. Preheat oven to 425. Lightly oil baking sheet.

  2. Whip together the egg replacer powder and water with a fork until thick and creamy. Set aside.

  3. In large bowl, combine flour, sugar, baking powder, and salt. Add butter to dry ingredients and use two knives to cut it into small pieces. You want a coarse crumbly batter that resembles bread crumbs.

  4. Stir in chocolate chips.

  5. Add soymilk and prepared egg replacer. Keep mixing to a minimum - this avoids developing the gluten in the flour, which makes tough scones. Mix with spoon or your hands until dry ingredients are moistened. The dough will not be completely smooth.

  6. Gather dough into a ball (add another teaspoon of soymilk if needed) and place on lightly floured surface.

  7. Pat or roll dough into 1/2-inch think round and cut pie-style into 8 pieces.

  8. If desired, brush with small amount of soymilk and sprinkle with cinnamon and sugar.

  9. Bake until tops are golden brown, 12-15 minutes. Let cool on wire rack.
