Recipe Ingredients for Chocolate Chip Pancakes

1 large egg white
1/2 cup low-fat buttermilk
1/2 cup oat flour
1/2 teaspoon baking soda
1/4 teaspoon vanilla extract
1/8 teaspoon salt
2 tablespoons chocolate chips
4 teaspoons pure maple syrup

Recipe Directions for Chocolate Chip Pancakes

  1. Preheat the oven to 200 degrees

  2. Whisk the egg white, buttermilk, flour, baking soda, vanilla, and salt in a small mixing bowl. Stir in 1-1/2 tablespoons water until well incorporated. Then, stir in the chocolate chips and let stand for 10 minutes.

  3. Preheat a large nonstick skillet over medium-high heat. When a spritz of water causes the skillet to sizzle, working in batches, mist the skillet with spray and pour 1/4 cup of batter per pancake onto the skillet. Cook until there are bubbles on the top and the bottom is golden brown, about 2 minutes. Flip each pancake and cook until lightly golden brown on the bottom, about another 2 minutes. Transfer the finished pancakes to an ovenproof plate, cover with foil, and keep them warm in the oven until they are all cooked. Serve immediately with 1 teaspoon maple syrup per pancake.
