Recipe Ingredients for Chocolate Chip Oat Bran Cookies

1/4 cup all purpose flour
3/4 cup whole wheat flour
1/4 teaspoon salt
1/2 cup smart balance, omega plus margarine
1/2 cup smart balance, omega plus peanut butter
1/2 cup splenda
1/3 cup SPLENDA, brown sugar blend
1/2 teaspoon vanilla extract
1 tablespoon soy flour
1 tablespoon water
1/2 cup oats, bran
1/2 cup semisweet chocolate chips
1/4 cup almonds, chopped
1/4 cup walnuts, chopped
1/2 tablespoon olive oil
1/2 tablespoon water

Recipe Directions for Chocolate Chip Oat Bran Cookies

  1. 1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper and set aside.

  2. 2. Whisk together dry ingredients; set aside.

  3. 3. On med speed, cream margarine, peanut butter, sugar, brown sugar, vanilla extract, about 3 minutes. Add liquid ingedients. On low speed, gradually add the flour until just combined. Stir in oat bran, then chocolate chips, nuts.

  4. 4. Use large cookie scoop (3 tablespoon) and drop into prepared baking sheets. Bake 10-17 min. Watch closely (lightly golden). Cool on baking sheet and store in airtight container at room temp.
