A whole wheat muffin with the addition of bean flour for fiber and protein.

Recipe Ingredients for Chocolate Chip Muffins

3/4 cup oat flour
1/4 cup navy beans
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup buttermilk
1 tablespoon olive oil
1 tablespoon honey
1 cup semi sweet chocolate chips

Recipe Directions for Chocolate Chip Muffins

  1. Grind oats, white wheat berries and beans in flour mill.

  2. Add baking soda, powder, salt and chocolate chips to dry flour mixture. Mix together.

  3. In separate bowl, mix wet ingredients.

  4. Add dry ingredients to wet and mix just untill combined. Do not over mix.

  5. Add to 12 count muffin tin.

  6. Bake @ 350 for 28 min
