Recipe Ingredients for Chocolate Chip Mini-Loaf

1/2 cup sunflower oil
2/3 cup sugar
2 large eggs
1/2 cup yogurt, low fat
1/4 cup skim milk
2 cups all purpose flour
1/2 tsp baking soda
1 tsp baking powder
1 cup chocolate chips

Recipe Directions for Chocolate Chip Mini-Loaf

  1. Line (8)mini-loaf pans with parchment paper, sized to fit each pan. Brush bottom lightly with oil. Preheat oven at 375*F.

  2. Sift the flour, baking soda and powder, and chocolate chips together in a small bowl.

  3. Place the oil, sugar, eggs, milk, and yogurt in a large bowl. Beat until combined.

  4. Add flour mixture to liquid ingredients. Stir until just blended. The batter will look quite wet. But do not over-mixed.

  5. Scoop batter into each pan evenly.

  6. Bake for 25 minutes, or until a tootpicl insertd into the center comes out clean.

  7. Cool on rack for 10 minutes, then take out of the loaf pan onto wire rack to cool completely.
