A delicious recipe taken off the back of a Coach's Oats bag (from Costco in Hawai'i). I substituted whole wheat flour for a bit of the flour portion. The cookies are a little dry after the first day, so you might want to experiment with adding another liquid. They're still REALLY good though.

Recipe Ingredients for Chocolate Chip Cookies w/ Steel Cut Oats

1 cup flour
3/4 cup whole wheat flour
1 tsp. baking powder
1/4 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3/4 cup butter
3/4 cup sugar, granulated
2 eggs
2 tsp. vanilla
2 cups steel cut oats
1 cup chocolate chips

Recipe Directions for Chocolate Chip Cookies w/ Steel Cut Oats

  1. Preheat oven to 375.

  2. Mix the drys together.

  3. Beat together butter and sugar until a smooth consistency is formed. Beat in eggs one by one, beat in vanilla.

  4. Mix the drys with the wets, add oats and chocolate chips.

  5. Drop by tablespoons onto a lightly-greased baking sheet. Cook for about 15 minutes, although watch the first batch.
