Nice and chewy, not too cakey or crispy! I used Sunspire semisweet organic chocolate chips, organic butter, eggs and ww pastry flour.

Recipe Ingredients for Chocolate Chip Cookies

1/2 c butter, unsalted
1 1/2 c Sucanat or brown sugar
1 t vanilla
2 eggs
2 1/4 c whole wheat pastry flour
1 t baking soda
1/2 t salt
1 c chocolate chips

Recipe Directions for Chocolate Chip Cookies

  1. Preheat oven to 375 degrees.

  2. Lightly spray cookie sheet(s).

  3. In mixer, cream butter and Sucanat until light and fluffy, about 5-7 minutes, scraping bowl several times to incorporate all the Sucanat.

  4. Add one egg at a time and mix well after each.

  5. Add vanilla and mix.

  6. In a separate bowl, combine flour, baking soda and salt and mix well using a whisk.

  7. Add flour mixture to liquids, mixing on low speed until blended. Dump in chocolate chips and mix a few seconds till mixed into batter.

  8. Cover bowl with damp cloth and refrigerate for about 20 minutes. Using either a cookie scoop or spoon, put small amount onto cookie sheet. Can fit four rows of four cookies on most sheets. Bake for 8-11 minutes until very lightly browned around edges. Cool a minute or two on cookie sheet, then move to cooling rack.
