Makes 40 servings

moist and chewy chocolate chip cookie

Recipe Ingredients for Chocolate chip cookie

1 cup brown sugar, firmly packed
1 cup sugar
1 1/8 cups butter, softened but not melted
2 eggs
1 1/2 tsp. Vanilla
2 cups white flour
2 1/2 cups oatmeal (before grinding)
1 tbs. baking soda
1 tsp. salt
18 ounces milk chocolate chips

Recipe Directions for Chocolate chip cookie

  1. Use a blender or food processor to grind the oatmeal into flour. In a blender grind about 3/4 of a cup at a time. Set aside in a bowl.

  2. In a large mixing bowl add:

  3. brown sugar

  4. sugar

  5. butter

  6. Mix these ingredients until well blended. Use a strong spoon or a heavy duty mixer like a kitchen-aid.

  7. In a small bowl mix the eggs with the vanilla until well blended.

  8. Add the eggs and vanilla to the sugar mixture. Beat until mixed in but don't over beat.

  9. In the bowl with the oatmeal flour add:

  10. white flour

  11. baking soda

  12. salt

  13. Mix with a spoon until all flours are blended.

  14. Now add the flour mixture 1/2 of a cup at a time to the sugar/egg mixture until all the flour is mixed in.

  15. When all the flour mixture is blended in, add the chocolate chips by folding them in until they are evenly distributed.

  16. Drop by teaspoon or tablespoons depending on the size you want, on to an ungreased cookie sheet. Leave room for cookie expansion while they bake.

  17. Bake at 350 degrees for 9 -11 minutes.

  18. Remove cookies from the oven and place them on wax paper on your counter.

  19. Letting them cool on wax paper seems to keep the cookies soft and chewy. Once the cookies are cool, store them in a Ziploc bag.

  20. If you like your cookies on the softer, chewy side, cook them for the shorter time period.

  21. Chill your cookie dough before baking and the cookies won't flatten out as much.
