The revenge for not leaving a cheesecake at my folks house for T-day. A layered Chocolate, Chocolate chip cheesecake with a Chocolate ganache and a cute little Chocolate Teddy/coffee crust. If you make this have plenty of friends to help.

Recipe Ingredients for Chocolate Chip Chocolate Cheese cake

24 ounce Crystal Farms Boxed Neufchatel Cream Cheese
1 cup Sugars, Granulated
3 large Egg, Whole Raw, Fresh
210 grams Teddy Grahams Graham Snack Chocolate
3 tsp Coffee, Instant, Regular, Powder
1/2 cup packed Sugars, Brown
10 ounces Candies, Semisweet Chocolate
4 tbsp Butter With Salt
1 tsp Vanilla Extract
1 cup Cream, Fluid, Heavy Whipping

Recipe Directions for Chocolate Chip Chocolate Cheese cake

  1. Preheat oven with 14" x 11" baking pan filled with 1 1/2" of water.

  2. Chop in a food processor the Teddy Grahams and Instant Coffee until fine. Measure 1.5 cups and reserve the rest.

  3. Melt the 4 tbsp of butter and combine the 1.5 cups Teddy crumbs and the .5 cups of Brown Sugar and press into the bottom of a prepped 9 inch springform pan (parchment paper over the bottom and inside the form and then sprayed with Pam). About a third of the crust will not fit, save that for center.

  4. Over a double boiler on low melt 4 ounces of the Semisweet Chocolate chips, on low(!). Set aside and let cool.

  5. With a blender cream together the Neufchatel Cream Cheese and sugar, one brick and .5 of a cup of sugar at a time.

  6. Blend in the eggs, one at a time, and the Vanilla Extract until smooth.

  7. Pour half the filling in to the springform and add 2 ounces of the Semisweet Chocolate chips, spreading them evenly in the filling and cover with the remaining crust crumbs.

  8. Mix the cooled but not hardened melted chocolate in the the remaining filling and pour that over the first filling layer.

  9. Bake for 1 hour at 350 checking at .75 hours (75 minutes). The cake should jiggle slightly when the pan is poked with a fork. DO NOT REMOVE FROM THE OVEN. Turn off the heat and hold the door of the oven open with a wooden spoon and let the cake cool for 30 minutes in the stove to prevent cracking (ok to try and prevent cracking).

  10. Chill in the fridge until cool or cover well and freeze for up to a week.

  11. Final prep.

  12. Chop remaining 4 ounces of Chocolate chips.

  13. Ganache: In a small saucepan over high heat, bring the 1 cup cream to a boil, then pour it over the chopped chocolate in the bowl. Stir until the chocolate is completely melted and the mixture is smooth. Set aside.

  14. Pour the ganache on the cheesecake and spread to cover the top. Sprinkle with remaining Teddy crumbs.
