1/2 cup unsalted butter
1 1/2 cups all-purpose flour
1/2 cup sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
3 bananas
1 large egg
1/3 cup plain yogurt
1 teaspoon pure vanilla extract
1 cup chocolate chips

Recipe Directions for Chocolate Chip Banana Bread

  1. Position a rack in the center of the oven and preheat to 350 degrees F. Spray 9x5x3 pan with Baking Pam.

  2. Melt the 1/2 cup butter in a small saucepan over medium heat or covered in a microwave-safe bowl or measuring cup in the microwave. Cool slightly.

  3. Whisk the flour, sugar, baking soda, salt, and cinnamon together in a large bowl.

  4. Mash the bananas with a fork in a medium bowl. Beat the egg in a small bowl with a fork or a whisk, then mix into the bananas. Mix in the yogurt, vanilla, and butter. Stir the wet ingrdients into the dry ingredients until just combinded. Stir in chocolate chps just as the batter comes together. Do not overmix the battter or your bread will be dense and tough; the batter should be wet, sticky, and a little lumpy. Scoop the batter into the prepared pan.

  5. Bake until a toothpick inserted in the center of the loaf comes out clean, 65 to 70 minutes. The bread should rise in the middle to a crown, feel springy when touched, and pull away from the sides of the pan.

  6. Cool in the pan on a rack for at least 20 minutes before runnning a knife along the sides, unmolding, and slicing.
