This cake is surprisingly yummy but sadly not so healthful that you can eat it all day... But definitely a healthful alternative for sweet craving time. Sometimes I crumble buts & cinnamon on the bottom of the pan for a "crust" and serve with a vanilla yogurt & berry garnish.

Recipe Ingredients for Chocolate Chick Pea Cake

1 1/2 (or 2) cups semisweet chocolate chips
14 ounce garbanzo beans, rinsed and drained
4 eggs, room temperature
1 tablespoon olive oil (or nut oil of choice)
1 teaspoon vanilla extract
3/4 cup white sugar
1/2 teaspoon baking powder
1 tablespoon confectioners' sugar for dusting

Recipe Directions for Chocolate Chick Pea Cake

  1. 1. Preheat the oven to 350F. Grease and flour a 9 inch round cake pan.

  2. 2. In a bowl placed over a steaming pot of water, gently melt the chocolate chips.

  3. 3. Combine the beans, eggs, oil and vanilla in the bowl of a food processor. Process until smooth. Add the sugar and the baking powder, and pulse to blend. Pour in the melted chocolate and blend until smooth, scraping down the corners to make sure chocolate is completely mixed. Transfer the batter to the prepared cake pan.(For a denser cake, bake immediately. For a lighter cake, let rest at room temperature for 10 - 20 minutes before baking.)

  4. 4. Bake for about 30 minutes in the preheated oven, or until a knife inserted into the center of the cake comes out clean. (Also, if you feel heat above 135F coming from the center of the cake, it is done.) Cool in the pan on a wire rack for 10 to 15 minutes before inverting onto a serving plate. Dust with confectioners' sugar just before serving.
