the raisins are actually dried cherries and i screwed around with the sugar and flours

Recipe Ingredients for chocolate cherry biscotti

1/2 c red wine
1/2 c raisins
1/4 c brown sugar
3 oz bittersweet chocolate
1 1/2 tsp vanilla extract
1 egg
1 egg yolk
1/2 c 100% whole wheat flour
1/4 c soy flour
1/4 c bran
1/2 c unsweetened cocoa
1 T instant espresso powder
1 1/2 tsp baking powder
1/4 tsp salt

Recipe Directions for chocolate cherry biscotti

  1. preheat to 350. pour wine in a bowl and nuke 1 min add cherries and let stand 30 min, drain well.

  2. place sugar and chocolate in food processor and process til ground.

  3. beat vanilla-egg yolk in bowl on med til blended and add sugar and beat 1 min. mix flour and remaining ingredients and stir. gradually add flour mix to egg mix beating til blended, add cherries, beat til blended. turn onto floured surface and knead lightly several times. divide dough in 1/2 and shape each to an 8" roll, place on baking sheet lined with parchment papper, and bat rolls to a 1" thickness. bake 20 min, remove and cool 10 min. reduce oven to 325 and cut each roll into 12 slices. place cut sides down on baking sheet and bake 10 min, turn cookies over and bake another 10 min. cool completely.
