Adapted from Pam Anderson's All Purpose Butter Cookie

Recipe Ingredients for Chocolate and Cherry Almond Butter Cookies

1/2 cup margarine, at cool room temperature
1/2 cup sugar
1/2 egg yolk
1/2 egg
1 1/4 cups flour
1 tsp vanilla extract
1/4 tsp almond extract
1/4 cup mini chocolate chips
1/2 cup dried cherries

Recipe Directions for Chocolate and Cherry Almond Butter Cookies

  1. Cream the butter and sugar until light and fluffy.

  2. Add yolk, beat well, then add whole egg and vanilla. Continue beating until well incorporated. Add flour and mix until just combined.

  3. Add in almond extract and combine. Stir in chocolate chips and dried cherries.

  4. Refrigerate the dough until firm, at least 1 hour. (Dough can be refrigerated for up to 2 days, or double-wrapped and frozen for up to 1 month.)

  5. Preheat the oven to 375 degrees.

  6. Roll the dough into a 9" long log and slice off cookies at 1/4" thick.

  7. Bake for 10-12 minutes, or until golden.
