Recipe Ingredients for Chocolate Cheesecake Cups

4 oz Neufchatel Cheese
2 oz Nonfat Sour Cream
4 oz Cream Cheese, Fat Free
216 g Natural Sweetener
2 tbsp Cocoa, Dry Powder, Unsweetened
1/2 cup Egg Substitute, Liquid
1 tsp Vanilla Extract
1/4 c graham crackers, chocolate
2 tsp graham crackers, chocolate

Recipe Directions for Chocolate Cheesecake Cups

  1. Preheat oven to 325.

  2. Line a muffin tin with paper or foil liners.

  3. Place 1 1/2 tsp of graham crumbs in each cup.

  4. In large bowl, mix softened cream cheeses, sour cream and sugar substitute together at medium or medium-high speed until fluffy (about 3 minutes).

  5. Add cocoa powder, vanilla and egg substitute. Mix on medium until blended.

  6. Fill muffin cups - an ice cream scoop works well here.

  7. Bake for 18-20 minutes, or until centers no longer jiggle when pan is shaken lightly.

  8. Place on cooling rack for 20 minutes.

  9. Cover and place in refrigerator for another 20 minutes before serving.

  10. Eat plain, or top with raspberries or a strawberry
