Originally, I meant to make this: http://www.damyhealth.com/2012/03/ice-cube-tray-chocolate-covered-cheesecakes/ Then I realized I had no ice cube trays and it all went down hill from there. Made it my own creation in the end. Little slice of heaven. Or at least it sure looks like it, haven't tried it yet...

Recipe Ingredients for Chocolate Cheese Cake Square

224 g virgin coconut oil
1/2 cup cocoa
10 g stevia
1/4 cup light cream cheese
1/2 cup 0% plain greek yogurt
4 g stevia
1/2 tsp vanilla
1/3 cup light peanut butter

Recipe Directions for Chocolate Cheese Cake Square

  1. Process coconut oil, cocoa and stevia in a food processor or something. I did mine in a blender. It'll get all runny and liquidy.

  2. Process the cream cheese and greek yogurt. The original recipe stops here and had strange little amounts. I doubled the yogurt and added peanut butter. I mean really, what isn't better with peanut butter?

  3. Add the peanut butter and other stuff. Unless you're like me and you sweeten and flavour your greek yogurt with stevia and vanilla in the first place, then you don't have to do that part.

  4. Now you can try to put them in little ice cube trays or mini muffin cups (nightmare), but in the end, I grabbed a glass loaf pan an threw it in the freezer for a minute.

  5. I sprayed it with a bit of pam, but it seems kind of silly. The chocolate part (which hits the pan) is oil. Is it really going to stick? Next time I may be a rebel and not spray it.

  6. Pour a third of the chocolate mixture in the pan.

  7. Throw the pan in the freezer and go play mindless games on Facebook for a bit if you like.

  8. Pull the hardened chocolate out of the freezer and layer half of the peanut butter mixture and then another third of chocolate. Once you pour the chocolate on just tilt and turn the pan until it spreads out nicely.

  9. Freeze it for a bit again.

  10. Put the rest of the peanut butter stuff on and then the last of the chocolate.

  11. Harden in the freezer again.

  12. After this, I'm going to guess I could pretty easily pull it out of the pan in one piece and cut it up on a cutting board the same way I did the fudge from Dashing Dish. I don't know yet though, so we'll see.
