Recipe Ingredients for Chocolate Caramel Thumbprints

2/3 cup sugar
1/2 cup butter
1 egg
2 tbsp milk
1 tsp vanilla
1 cup flour
1/3 cup cocoa
1/4 tsp salt
1 cup finely chopped pecans
112 g Traditional Caramels
3 tbsp. whipping cream
1/2 cup chocolate chips
1 tsp shortening

Recipe Directions for Chocolate Caramel Thumbprints

  1. Mix together sugar, butter, egg yolk, milk and vanilla together until blended. In separate bowl, combine flour, cocoa and salt. Blend dry ingredients with butter mixture. Chill for at least 1 hour.

  2. Preheat oven to 350o. Beat egg white slightly. Roll chilled dough into 1 inch balls and dip in egg white. Roll dipped balls in pecans. Place 1 inch apart on greased cookie sheet. Press thumb into the centre of each ball. Bake for 10 ? 12 minutes.

  3. Combine caramels and cream in heavy saucepan and heat over medium heat. Spoon melted caramel into indents in the baked chocolate base (you may need to press indent again once baked).

  4. Melt chocolate chips and shortening together and drizzle over cookies.
