comparing unfrosted chocolate cakes, this is about 60 calories less than a 12 serving typical chocolate cake. Try 'frosting' it with raspberries. A tasty low cal alternative.

Recipe Ingredients for chocolate cake

1 c flour
2 T cocoa powder
1/4 t baking soda
1/4 t baking powder
1/4 t salt
1/3 c low fat buttermilk
1 T vanilla
1 1/2 c sugar
1/3 c unsalted butter
1 egg
2 egg whites

Recipe Directions for chocolate cake

  1. Preheat oven to 350F. Lightly spray a 10" tube pan with nonstick spray. If fluted, dust lightly with flour after spraying.

  2. Sift together flour, cocoa, baking soda, baking powder and salt in a med. bowl.

  3. Combine buttermilk and vanilla in a small bowl. Set aside.

  4. Beat sugar and butter in a large bowl until fluffy. Add egg and continue beating until well incorporated. Add flour mixture in 2 additions, alternating with buttermilk mixture, mixing until each addition is fully incorporated. Beat until smooth.

  5. Beat egg whites in a large bowl until they form a soft peak, 2-3 mins. Gently mix 1/3 of the whites into the batter to lighten it. With a rubber spatula, gently fold in the remaining whites. Pour better into the pan. Bake until a toothpick comes out clean, about 40 mins. Cook in the pan on a rack 10 mins., remove from the pan and cool completely on the rack. Dust with cocoa.
