Recipe Ingredients for Chocolate Cake IV

2 oz semisweet chocolate
2 oz bittersweet chocolate
1/2 c butter
2 c light brown sugar
3 eggs
2 tsp vanilla extract
2 1/4 c cake flour
2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1/2 c buttermilk
1 c boiling water
12 oz bittersweet chocolate
1 1/4 c whipping cream
1 tbsp butter
2 tbsp coffee liqueur
5 tbsp flour
2 tbsp unsweetened cocoa
2 tbsp instant coffee granules
1 c half-and-half
1 c butter
1 c powdered sugar
1 tsp vanilla extract
1 oz milk chocolate

Recipe Directions for Chocolate Cake IV

  1. Grease and line 3 8-in round cakepans with wax or parchment paper. Preheat oven to 335 F.

  2. Melt 4 oz mixed chocolate, stir till smooth.

  3. Beat 1/2 c butter till creamy. Gradually add brown sugar, beating till light and fluffy. Add eggs singly, beating just till yellow disappears after each addition. Stir in melted chocolate and vanilla.

  4. Sift together flour and next 3 ingredients. Add to butter mixture alternately with buttermilk, beginning and ending with flour mixture. Stir in boiling water. Pour into prepared pans.

  5. Bake 22-24 min, till toothpick inserted in center comes out clean.

  6. Heat whipping cream over med heat just till it begins to boil. Pour over 12 oz chocolate, stir till smooth. Stir in 1 tbsp butter and liqueur. Let stand 45 min or till spreading consistency. Makes 2 c.

  7. Whisk together flour through half-and-half. Cook over medium heat till thickened, whisking constantly. Spoon mixture into bowl, cover surface with plastic wrap. Let stand 30 min/till cool.

  8. Beat 1 c butter and powdered sugar till light and fluffy. Gradually add cooled mixture, 1 T at a time, beating till consistency of whipped cream. Makes 1 1/2 c.

  9. Cake assembly: 1 layer, 1/4 c ganache, half of mocha cream filling; repeat; lay third layer on top and frost sides and top of cake with remaining ganache.

  10. Garnish with milk chocolate curls.
