Chocolate Cake with Character Recipe

Recipe adapted from Beatrice @ la tartine gourmande. I used homemade vanilla bean apple puree. I was successful making the cake w/out olive oil, but the addition makes it a bit more moorish ;) Keeps for a good 3 days at room temp, well wrapped. A few seconds in the microwave make wonders just before serving!!

Recipe Ingredients for Chocolate cake with character

125 g dark chocolate
50 g butter
25 g olive oil
4 eggs, separated
70 g raw caster sugar
30 g Rapadura Organic Whole Cane Sugar
125 homemade vanilla bean puree apple
30 g almond meal
40 g Organic Quinoa Flour
40 g buckwheat flour
1 pinch salt
10 g caster sugar, extra

Recipe Directions for Chocolate cake with character

  1. Grease and line bottom of 20cm springform tin w baking paper. Flour sides of the tin and shake off excess.

  2. Cream egg yolks with the 2 sugars until pale and thick. Add the apple puree and oil, if using.

  3. Melt chocolate and butter, set aside to cool slightly.

  4. Beat egg white until soft peaks, add extra caster sugar (1tbsp) and beat until semi stiff and glossy.

  5. Combine choc mixture with egg mixture. Lightly incorporate flours and fold in egg whites.

  6. Pour in prepared tin and bake for 20-23 minutes, until sides begin to crack but middle still look slightly wet.

  7. Let cool in the tin. Cover tin w plastic wrap and store in an airtight container at room temperature. Will keep 3 days.

  8. Serve slightly warmed, dusted w icing sugar and cacao.
