Recipe Ingredients for Chocolate cake w/ beets

1 c. brown sugar
1/4 c. canola oil
1 egg
2 egg whites
3 oz. bittersweet chocolate
1/2 c. beet
1/2 c. buttermilk
1 tsp vanilla
2 c. whole wheat flour
1 tsp. baking soda
1/4 tsp. salt

Recipe Directions for Chocolate cake w/ beets

Preheat oven to 350F. Line muffin tin with cupcake papers. In large mixing bowl beat the brown sugar with the oil until creamy. Add the eggs one at a time. Beat in the melted chocolate, beet puree, buttermilk and vanilla. Add the flour, baking soda and salt and beat until smooth. Pour the batter into the cupcake papers and bake until toothpick comes out clean when inserted into the center: 15 - 20 minutes. Let cake cool completely before frosting.
