Chocolate high fiber sugar-free low-fat muffins.

Recipe Ingredients for Chocolate bran muffins

2 cups bran flakes
2 2/3 cups lowfat buttermilk
1/2 cup prunes
2 cups Splenda
2 cups white flour
1 cup baking cocoa
2 teaspoons baking soda
2 teaspoons vanilla
1/2 teaspoon salt
2/3 cups chocolate chips
1/2 cup egg substitute

Recipe Directions for Chocolate bran muffins

  1. Soak bran flakes (or Fiber One) in buttermilk for 5 minutes.

  2. Mix dry ingredients (except chocolate chips).

  3. Mix rest of liquid ingredients with buttermilk & bran.

  4. Stir liquid mixture into dry mixture.

  5. Add chocolate chips.

  6. Bake at 375 for about 18-20 minutes.
