1 ww point each NOTES: 1. Sour milk using 1 tbsp lemon juice or vinegar. 2. Use 3 or 4 egg whites - just enough to make 1/2 cup.

Recipe Ingredients for Chocolate Bran Muffins

1 c. All Bran cereal
1 2/3 c. 1% milk
1/2 c. Unsweetened applesauce
4 egg whites
1 c. Packed brown sugar
3/4 c. Whole wheat flour
2/3 c. cocoa powder
2 t. Baking soda
1 t. Vanilla
1/4 t. Salt
1 tbsp. margarine

Recipe Directions for Chocolate Bran Muffins

  1. Heat oven to 350F.

  2. Place cereal in a resealable food-storage plastic bag; seal bag and crush with a rolling pin or meat mallet (or crush in food processor).

  3. In medium bowl, mix cereal and buttermilk; let stand 5 minutes. Stir in applesauce and egg substitute. Stir in remaining ingredients. Fill each muffin cup about 1/2 full (use 1/4 cup of batter in each muffin)

  4. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Cool on wire rack.
