Chocolate flavored bran muffins with chocolate chips.

Recipe Ingredients for Chocolate bran muffins

2 cup wheat bran
1 cup All-Bran cereal
1/4 tsp salt
1 cup water, boiling
2 cup 1% milk
1/2 cup dates, chopped
1/3 cup splenda
1/3 cup granulated sugar
2 eggs
1/2 cup apple sauce
2 tbsp canola oil
2 cups whole wheat flour
1/2 cup rye flour
2 1/5 tsp baking soda
1/2 cup cocoa

Recipe Directions for Chocolate bran muffins

  1. Preheat oven to 375 F. Line muffin tins with paper liners.

  2. In a bowl combine bran, cereal and salt. Pour boiling water over top and stir. Add milk and apricots and stir.

  3. In another bowl whisk together splenda, sugar, oil, apple sauce, and eggs.

  4. Add dry ingredients followed by bran mixture.

  5. Stir to combine.

  6. Divide evenly among muffin cups and bake for about 20 mins.
