Recipe Ingredients for Chocolate Biscuits

1 1/2 cups flour
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
3 tbsp oil (I use olive oil)
1/2 cup skim milk (I use Vanilla Rice Dream)
1 tsp apple cider vinegar (can use white vinegar)
2 tbsp chocolate chips
2 tbs sugar

Recipe Directions for Chocolate Biscuits

  1. Preheat oven to 450 degrees. Lightly spray a cookie sheet or pizza pan with cooking spray. Combine dry ingredients. Add wet ingredients. Knead with hands until well combined. Press or roll out to 1/2 inch thickness. Cut out with 2-inch round cutters. (Makes 12-13 biscuits.)

  2. Bake for 9-10 minutes.

  3. Using above biscuit recipe, add to dry ingredients:

  4. sugar and cocoa powder

  5. In a food processor, grind the chocolate chips until they resemble crumbs. Set aside.

  6. Follow directions in recipe above, except when you roll batter out, roll out thinner, to 1/4 inch insted of 1/2 inch thickness. Sprinkle 1/2 tsp. of chocolate chip crumbs onto a circle of dough, leaving a bit of edge space. Cover dough with another circle of dough and pinch ends together to close. (Enclosing the chocolate chip crumbs inside the two biscuit pieces). Repeat with the remaining biscuits. You should have 12 finished biscuits.
