Recipe Ingredients for Chocolate and beet muffins

1 3/4 cup Self Raising flour
2 beets, cooked and peeled, and either pureed or grated
1/3 cup cocoa powder
1 cup brown sugar, well pressed down
2 eggs
1/3 cup low-fat buttermilk, made from skim and lemon
1/6 cup canola oil
1/6 cup applesauce

Recipe Directions for Chocolate and beet muffins

  1. Splodge it all into a bowl. Mix well.

  2. Spoon into a greased muffin pan, or patty cases. Bake at 200 C for about 25 minutes- they will be well risen and firmish to touch.

  3. Eat hot, but they are still good next day and the one after.

  4. PS A few currants are also good in this.
