Recipe Ingredients for chocolate beet bread

1 cup whole wheat flour
3/4 cup ground flaxseed
1/2 cup soy flour
1/4 cup dark brown sugar
1 cup golden brown sugar
3/4 cup cocoa powder
1 1/2 tsps baking soda
1/2 tsp salt
3 tsps cinnamon
1/2 tsp nutmeg
1 egg
2 egg whites
3/4 cup applesauce
1 cup beets (cooked and pureed)
2 tsps vanilla

Recipe Directions for chocolate beet bread

  1. preheat oven to 350F

  2. mix dry ingredients (whole wheat flour, ground flaxseed, soy flour, sugar, cocoa powder, baking soda, salt, cinnamon, nutmeg)

  3. in another bowl, mix the wet ingredients (eggs, applesauce, pureed beets, vanilla)

  4. mix wet ingredients into dry ingredients until moistened

  5. grease an 8 1/2 x 4 1/2 loaf pan with butter, margarine or non-stick spray

  6. pour batter in loaf pan. bake for about 55-60 minutes until dark brown, or until a toothpick inserted in the center comes out clean (this time may vary depending on your oven)

  7. Let cool in the pan on a rack for at least 10-15 minutes before unmolding to cool completely on the rack
