Chocolate and Banana Muffins. Adapted from a Alison Holst recipe. Apple sauce has been substituted for the normal margarine/butter and the amount of chocolate chips reduced. Sugar has also been reduced from 100g to 50g. Muffins now have 192calories per serving instead of 300kcal.

Recipe Ingredients for Chocolate and Banana Muffins

500 g Wholemeal flour
15 g chocolate chips
3 tsp baking powder
50 g caster sugar
1/2 tsp salt
100 g apple sauce
250 ml skim milk
1 egg
1/2 tsp vanilla extract
250 g banana
4 g olive oil

Recipe Directions for Chocolate and Banana Muffins

  1. With a fork, stir together in a large bowl the flour, caster sugar and salt.

  2. In another container, add apple sauce, milk, egg and vanilla and beat well.

  3. Mash and measure the bananas and stir them into the liquid. Tip all the liquid mixture into the bowl with the dry mixture. Fold everything together carefully until all the flour is dampened, stopping before the mixture is smooth.

  4. Using a pastry brush coat muffin pans with a small quantity of oil to stop them sticking.

  5. Bake at 220 degrees Celsius for 12 to 15 minutes, until muffins spring bake when pressed in the centre.
