Recipe Ingredients for Chocolate Banana Bran Muffins

1 cup all-purpose flour
1/2 cup sugar
1/4 cup cocoa
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 cups All-Bran
3/4 cup skim milk
1 egg
2 tablespoons apple sauce
1 cup sliced ripe bananas, partially mashed
1/2 c chocolate chips

Recipe Directions for Chocolate Banana Bran Muffins

  1. In medium bowl, mix together flour, sugar, cocoa, baking powder, baking soda and salt. Set aside

  2. In large mixing bowl, mix together cereal and milk. Let stand for 5 minutes or until cereal is softened.

  3. Stir in egg whites and oil; beat well. Stir in bananas. Add flour mixture, stirring only until combined. (Mixture will be thick.)

  4. Spoon batter into 12 large muffin tins, coated with non-stick cooking spray or lined with muffin papers.

  5. Bake at 200 degrees C (400 degrees F) for about 20 minutes or until browned and firm to the touch. Serve warm. May be frozen.
