A delicious & moist chocolate cupcake using avocado and olive oil. Can also be baked as a bigger cake using two 8-9 inch cake tins. Recipe adapted from Joy the Baker. Try it!

Recipe Ingredients for Chocolate Avocado cupcakes (vegan)

360 g flour
40 g cocoa powder
1/2 tsp salt
2 tsp baking powder
2 tsp baking soda
350 g sugar
1/4 cup light olive oil
135 g avocado, well mashed (1/2 cup)
2 cups water
2 tbsp white vinegar
2 tsp vanilla

Recipe Directions for Chocolate Avocado cupcakes (vegan)

  1. Preheat oven to 350 degrees F. Line a muffin tray (i used silicon case, their are brilliant!) or grease and line two 8 or 9-inch rounds in making bigger cakes. Set aside.

  2. Sift together all of the dry ingredients except the sugar. Set that aside too.

  3. Mix all the wet ingredients together in a bowl, including the super mashed avocado (no lumps please!)

  4. Add sugar into the wet mix and stir.

  5. Mix the wet with the dry all at once, and beat with a whisk (by hand) until smooth.

  6. Pour batter into tins. I used 1/3 cup batter for each cupcake.

  7. Bake for 18-22 min for cupcakes or 30 to 40 minutes for cake, until a toothpick inserted comes out clean.

  8. Let cakes cool in pan for 5 or 15 minutes, then turn out onto cooling racks to cool completely.
