Recipe Ingredients for Choco-peanut Pumpkin Cookies

1 cup rolled oats
1/2 cup whole wheat flour
1/2 cup defatted peanut flour
3 scoops met-rx protein powder
1 3/4 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 cup canned pumpkin
1/4 cup granulated splenda
1 tsp oil
2 teaspoons water
2 Egg whites

Recipe Directions for Choco-peanut Pumpkin Cookies

  1. Preheat oven to 350 degrees. Spray baking sheet with non-stick cooking spray, (or cover with parchment paper for easy clean up).

  2. In a large bowl, whisk together oats, flour, protein powder, baking soda, baking powder, salt, cinnamon, nutmeg, and brown sugar.

  3. In a separate bowl, stir together pumpkin, honey, butter, water, and egg whites.

  4. Add the pumpkin mixture to the bowl with the dry ingredients and mix until everything is well incorporated.

  5. Roll into 14 large balls, and flatten on a baking sheet

  6. Bake for 5 minutes. *Note: Be careful not over bake or cookies will dry out!
