Yields 2 loaf pans - adapted from another recipe

Recipe Ingredients for Chock Full o' Veggie Meatloaf

2 pounds ground deer
1/2 pound carrots
1 small zucchini
1 green bell pepper
1 c stewed tomatoes
1 large onion
5 cloves garlic
1/2 c parsley
1/2 tbsp thyme
1/2 c Better 'n Eggs
1 1/2 c bread crumbs

Recipe Directions for Chock Full o' Veggie Meatloaf

  1. dice onion and green onion - place in large bowl

  2. place remaining veggies in food processor (you'll have to do it in batches) and process until smooth - place in bowl

  3. add meat, spices, egg, and bread crumbs and mix with hands until well incorporated

  4. put into loaf pans, making sure to press in to avoid air bubbles

  5. bake at 350 for approx 1 1/2 hours. Remove pans from oven and let sit for 20 min. Invert onto plate and slice.
