My version of the sneaky chef's Choc-ful donuts/cupcakes

Recipe Ingredients for chock full cookie cakes

1/2 cup oil
1/3 cup semisweet chocolate chips
1/2 cup egg substitute
2 tsp vanilla extract
1/2 cup splenda
1 cup blueberries
1 cup spinach
1 1/2 cup black beans
1/3 cup wheat flour
1/3 cup wheat germ
1/3 cup rolled oats
2 tbsp unsweetened cocoa powder
1/2 tsp salt
1/2 tsp baking soda

Recipe Directions for chock full cookie cakes

  1. melt the chocolate chips in the microwave and set aside.

  2. Puree blueberries, spinach and black beans. Add a couple of teaspoons of lemon juice and a couple teaspoons of water.

  3. In another bowl, stir together eggs, vanilla, puree, and sugar.

  4. Add the chocolate.

  5. In another bowl stir together the rest of the dry ingredients.

  6. Mix all together.

  7. Spoon onto baking sheet, cook at 350 for 20 minutes.
